Indian Pudina Chutney Recipe (पुदीने की चटनी)

Ingredients:
- Mint – 2 cups
- Dry roasted peanuts – ½ cup
- Green chillies – 8
- Oil – 2 tsp
- 3-4 shelled deseeded tamarind pods
- Jeera – ¼ tsp
- Salt as needed
Tempering:
- Cumin – ¼ tsp
- Mustard seeds – ¼ tsp
- Urad dal – ¼ tsp
- Chana dal – ¼ tsp
- Curry leaves – 1 tbsp
Instructions:
- Wash the mint thoroughly with salt water to clean off the pesticide content.
- Take 1 tsp of oil in a shallow pan and sauté the chilles and keep aside.
- In the same pan, sauté the mint for about 5 min with continuous stirring.
- Take all the remaining ingredients in a mixer jar and grind to a coarse paste adding very little water.
- Temper this chutney to elevate the flavour of mint in the chutney. Transfer this to a serving bowl and use as needed.
Notes:
* Prefer fresh pudina for good flavour. Well, I have a fresh bunch of mint leaves growing in the balcony and use it as and when required.
