Vegetable Pulao is quick and easy when made in a pressure cooker. Running short of time and want a complete meal, then pressure cooker vegetable pulao recipe is the perfect answer.

I like to cook food that gets ready quick and easy. So I always keep looking for short cuts and all possible deviations in cooking. That doesn’t mean I compromise with taste or health.

Taste being my first and health being my second priority, I never compromise; actually they go hand in hand in all my recipes. I make sure the procedure and ingredients are on par with my requirements.

Healthy & Kid-Friendly One-Pot Meal

Lunch box recipe of vegetable pulao is a simple one-pot meal that can be packed for your kids. If you’ve leftover veggies and running short of time, then pressure cooker vegetable pulao is the perfect option.

First of all, we all like food in restaurants. But neither can we eat it daily nor do we want to cook as it is at home. I want my food to taste homely, not restaurant-style.

My husband says, “what is the fun in eating at home when you serve the food that tastes the same as restaurant foods?” He wants me to differentiate clearly between restaurants and home-made foods.

He says one should be able to understand that it is home-made and still delicious.

(Whenever I talk about my husband, please do not misunderstand that he is a good cook. He is not! Not that he is a typical husband who shows off his male ego, but cooking is not his cup of tea. But he definitely is my critic whom I badly need for my recipes.)

So, my motto behind cooking is that it should be healthy, homely and easy to cook. Tough right? No!!! Here is a simple homemade delicious mixed vegetable pulao recipe.

Pressure Cooker Vegetable Pulao Recipe:

Quick and easy mixed veg pulao recipe made in a pressure cooker.

Ingredients:

  • Soaked rice – 2 cups
  • Sliced Onions – 2 medium
  • Chopped Carrots -3
  • Cubed Potato – 1
  • Peas – ½ cup
  • Slit Green chillies – 5
  • Chopped Mint – 1 cup
  • Ginger garlic paste – 1 tbsp
  • Salt – as per taste
  • Ghee – 1 tbsp
  • Cashew – 10
  • Cardamom – 5
  • Clove – 5
  • Cinnamon – 1 inch stick
  • Black cumin/ shahi jeera – 1 tsp
  • Star anise – 1

How to Make Vegetable Pulao in Pressure Cooker (Instructions):

  1. Soak rice for half an hour. Do not drain water and keep it aside much before cooking. Drain water when you are ready to add it to the pulao.
  2. Take ghee in a cooker and heat it. Add all the dry spices and sauté till nice aroma.
  3. Add onions, green chillies and sauté. Once they turn transparent add ginger garlic paste and sauté till the raw flavour is gone.
  4. Add all the vegetables and cook for some time.
  5. Once the vegetables are cooked add mint and mix well.
  6. Once you feel the flavour of the mint, add water and let boil it.
  7. When the water comes to boil, add rice.
  8. Close the lid and pressure cook.

Notes

* I have used the vegetables that are available for me here. You can use any vegetable of your choice. Beans, cauliflower, paneer, soya chunks can also be used.

** I avoided using tomato here as it will give a sour taste to the mixed vegetable pulao recipe. You can use tomato if you are okay with the sourness of tomato in your pulao. But I like the subtle taste of this veg pulao without tomato.

*** If you think a lot of ghee is being added to the pulao, you can substitute it with oil. You can also use both. Nice aroma of this pulao comes only by adding ghee.

**** Please do not get confused between biryani and pulao. Biryani is a type of rice enriched with yoghurt and all spices.

***** Many people mix rice to the cooked vegetables and sauté it. I somehow felt that it either takes more amount of ghee or the rice is broken when you stir continuously to mix it with the vegetables.

****** Let me confess, I didn’t use basmati rice here. Of course, this mixed vegetable pulao tastes much better with basmati rice. The reason again behind my not using basmati is again the same. Adding basmati rice gives me a feeling that I am eating restaurant food. You can liberally use it as per your desire.

Ingredients
