Pudina Chutney Recipe South Indian Style

Being my mom’s signature dish, I just love mint chutney with rice.

Ingredients
  

  • 2 cups Mint
  • ½ cup Peanuts dry roasted
  • 8 Green chillies
  • 2 tbsp Oil
  • 4 tamarind pods shelled deseeded
  • ¼ tsp Jeera
  • Salt as needed

Tempering:

  • ¼ tsp Cumin
  • ¼ tsp Mustard seeds
  • ¼ tsp Urad dal
  • ¼ tsp Chana dal
  • 1 tsp Curry leaves

Instructions
 

  • Wash the mint thoroughly with salt water to clean off the pesticide content.
  • Take 1 tsp of oil in a shallow pan and sauté the chilles and keep aside.
  • In the same pan, sauté the mint for about 5 min with continuous stirring.
  • Take all the remaining ingredients in a mixer jar and grind to a coarse paste adding very little water.
  • Temper this chutney to elevate the flavour of mint in the chutney. Transfer this to a serving bowl and use as needed.

Notes

*  Prefer fresh pudina for good flavour. Well, I have a bunch of fresh mints growing in the balcony and use it as and when required.
