Tempering:

Curry leaves
Instructions
Wash the mint thoroughly with salt water to clean off the pesticide content.
Take 1 tsp of oil in a shallow pan and sauté the chilles and keep aside.
In the same pan, sauté the mint for about 5 min with continuous stirring.
Take all the remaining ingredients in a mixer jar and grind to a coarse paste adding very little water.
Temper this chutney to elevate the flavour of mint in the chutney. Transfer this to a serving bowl and use as needed.
Notes
* Prefer fresh pudina for good flavour. Well, I have a bunch of fresh mints growing in the balcony and use it as and when required.
